Roast Butternut Pumpkin with Honey, Feta and Broth Bliss


1 kg of  butternut pumpkin, sliced into 1cm thick pieces

2 tablespoons of olive oil

250g of feta or 

100g of  pepitas or pumpkin seeds

1/2 cup of  chopped parsley

2 tablespoons of honey

100ml of Broth Bliss bone broth


Preheat oven to 200C

Place the pumpkin in a shallow oven proof dish

Sprinkle with remaining ingredients


Serve as is or use in salads
